Louisiana Cajuns like one thing more that Louisiana Crawdads. That's Duck Gumbo and duck hunting.
Louisiana is direcftly in the prime-water fowl flyway and migration each year. We are proud to have th eworld renown hunting lodges here, Crosse Savannne Lodge, endorsed by Orvis.
Here on Lake LaFourche we expect to see an increase in Ducks due to the increased acreage in rice and corn.
Here in Cajun Community, duck gumbo is a cajun's delight. Justin Wilson used duck gumbo to become popular when he started out. He made his duck gumbo famous with his red wine mixture. He tasted the wine each time he added some to the gumbo. By the time he got that gumbo done, he was feeling the wine. There are many duck gumbo recipes in cajun country.
Now days folks buy 10 and 12 gauge 3-3 1/2 inch steel shot gun shells for duck hunting. There are a wide variety of guns used from $500.00 to $3500.00 from all kinds of manufacturers. Probably the most popular are Remington and Winchester.
There are a wide variety of Duck Blinds and Duck Boats for folks to choose from. Some of our old country boys hunt in the natural swamps. You need a good set of chest waders and a lot of energy. Being an early riser is a must in cajun country starting around 3:00 AM.
Now if you are serious about Duck hunting you have to have a good "Duck Dog." A good retriever is a friend for life. The swamp will give a dog a good workout. The retrievers are a pleasure to watch in action. Some time I wonder how "Fido" keeps from freezing to death. My other Duck dog is "Flash." She wants to retrieve before the duck is down. She thinks she should be able to fly just as well as a duck. "Dumb Dog" don't know she don't have any wings. She looks at "Fido" as if to say, "Why didn't you go after that last flight of ducks?"
Well folks, that's a duck hunt in Cajun Country with Jim the Cajun.
